Hopefully a couple of simple queries....

I would like to track how much data some clients are consuming.
From the Report module is the Received DataOctets the best field to use?

Is there a way to export a larger time-span, as when 1 month is selected for the report it still only shows data for the current day.

From the reports module, you'll probably want to look at the "Clients" -> "Client Sessions" report. You'll want to select the "Old Report Version" style.

The data is from the perspective of the AP, not the client, so if you're interested in how much data the specific WiFi client downloaded you want "Transmitted Data Octets". Received would give you how much he uploaded, which will generally be much smaller.

The report will only give you a view of a client's first session, so you'll need to click on the "Next" and "Previous" buttons to move through each of the client's sessions to see the data they consumed over the full month. That's probably why you're only seeing the first day of data. If you want a quick way to get to the total consumption for the client you can export the data to CSV file and load it into Excel. Simply click on the "Export" button near the top of the screen.
