There is detailed documentation in the Aerohive 6.0 New Features Guide:

See p. 11-23.

You run into AVC in two main locations:

1. Dashboard Screen. In the "Applications" tab of the dashboard screen you can see which applications and protocols are being accessed. You can apply filters by network policy or tags in the "Device Groups" area or SSID and user profile in the "Data Filters" area.

2. Firewall. The layer seven firewall integrated into each access port supports both network based and application/protocol based rules. This means you can create firewall rules with the traditional network protocols; such as DNS, and DHCP; and applications; such as Facebook and DropBox.

A third large configuration area that AVC affects is QoS. You can map Layer 3 and 4 services and Layer 7 applications to Aerohive classes and then apply data rate controls and queuing policies to prioritize different types of traffic.

To help with the frustration. It can take some time to populate the dashboard after initial deployment. So don't expect immediate results after pushing the config.
